Miyakobijin Shuzō "Yoigokochi Yuzu Sake" NV 720ml
Tōji (master brewer) produces this sake with a natural brewing method called Yamahai-shikomi.
This method does not call for pounding rice and koji into the pureed, moto. Instead it uses temperature control to allow the enzymes from the koji to convert all the rice into moto naturally.
Basically this method allows for an eclectic sake drinker to enjoy funkier, higher sweetness and acid, and earthier sips. The oils from the yuzu collects on top so give it a good vigorous shake before enjoying.
